    Great supper recipe! Especially when you don't have any idea what you're going to make to eat. You always have cheese, bread, and probably beer. We sub aleppo pepper for the cayenne. I frequently make this with my homemade sourdough English muffins instead of toast. We vary this with a sprinkle of crisp crumbled proscuitto or bacon. Or top English muffins or toast with sliced ham or crisp bacon strips and tomatoes and then the rarebit sauce. All you need for a complete meal is a side salad. The bistro mushroom recipe in the side bar is also a delicious side dish.
