    Really nice dressing and dip for vegetables. Very fluid when initially made, but once allowed to chill, it thickens considerably. I would probably make it fresh if using on a dressing, but make ahead if using for a dip. Strong acid edge; if using for a vegetable dip, I reduce the vinegar.
