    Very quick and fresh summer salad. Nigella recommends making it in the processor but I was just using two beets so I grated by hand (with rubber gloves on to avoid hands like Lady Macbeth as Nigella describes them). Fresh flavors from dill and lemon plus a crunchy kick from mustard seeds. For anyone who has never tried raw beetroot, definitely give it a go.
