    The jar in my fridge that I thought was peppers in oil was actually sun dried tomatoes in oil, so I used those instead of the peppers stated in the recipe. I really enjoyed this dish, it's definitely one of the better lentil salad recipes that I've dried, helped along by lots of punchy, salty, zingy little ingredients mixed into it. I wasn't sure what to do with the onion and garlic boiled with the lentils, I ended up shredding some of them up and adding them to the finishing salad, which seemed to work well.

    This salad lent itself very well to deconstructing. The combination of flavors worked very well, I only thought there was too much lemon zest.
