    Can substitute dried wild mushrooms for dried porcini mushrooms, rice or buckwheat for pearl barley, and pickles for the book's "Quick-fermented cucumbers" specified in this recipe.

    Used the quick pickle recipe for the pickle and pickle juice. This was good. Tasty and decently hardy. Would say it was sour though.
