    A nice make ahead lunch to stick in the freezer and thaw at your convenience. They are a little drier than I would like, but the flavor is good. I would make these again.

    I was looking for some healthy lunch ideas that I could prepare on the weekend and eat during the week. This book has plenty of ideas for that and this is the first recipe I tried. I liked it a lot. I loved cooking the filling in the slow cooker, and it has just enough cheese to make it taste like it isn't diet food. I didn't feel like they needed sour cream or guacamole.
