Can substitute herbes de Provence for dried oregano.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Quite good. Make sure the orange strips are wide and long (easier to fish out). Used just 2.5 lbs chuck but kept liquid amounts the same plus a little more. Almost all the liquid cooks away during last uncovered hour. There are 4 beef stew recipes on this and the facing page and I mean to try them all. So far, I liked the Nihari-Inspired Beef Stew better than this one (my penciled note in the book is "Delic," but this one was good enough to make again now and then. Very easy, too.
