Beef and leek stew with smoked paprika from Milk Street: Cookish: Throw It Together (page 280) by Christopher Kimball

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Because of the quantity of paprika in this dish, I wondered (worried) that it would overwhelm. Didn't. The meat was good, tender, the leeks fairly melt, but overall there's nothing special about this dish. There are four beef stew recipes in the Low-Liquid Braise section of this book and this is the 3rd I've tried and my least favorite. Last one to try is Cumin-Garlic Beef Stew, though I have concerns about using dried apricots (not a fan of cooked fruit, but so many Milk St. recipes deliver that I'll see). So far in order of preference: 1) Nihari-Inspired Beef, 2) Beef Stew w/Olives & Orange, 3) Beef and Leek Stew w/Smoked Paprika. All on pages 280-281.
