    I cut this in 1/2 to make a couple of mini loaves and they were delicious with last night's dinner soup. The batter comes together very quickly but I'm glad she warned us that it would be thick or I might have worried that something was wrong. With the optional pickled jalapenos & their brine, these are an absolute repeat.

    It really did taste of cheese-y nachos and we loved it. It was a great accompaniment to tomato soup. I didn't have pickled jalapeno chiles so used the substitute of lime juice for the brine but also added a chopped fresh jalapeno. I baked the batter in 4 mini loaf pans for 40 minutes.
