    These really are easy (melted butter = easy hand mixing) and I also used the masses provided. My dough chilled overnight & then sat at room temp for a bit for easier scooping. Using 20 g balls, I got 43 cookies. I rolled some in vanilla sugar and some in a vanilla spiced sugar (with added cardamom, cinnamon, allspice & nutmeg) and spiced won the day. I will say they are pretty rich & I still do prefer a good old fashioned super spicy ginger cookie without the chocolate.

    Delicious and easy! The dough is stirred together - no need to use a mixer. It does need some (2 hours) chilling before baking. Make with weights listed in recipe and they came out perfectly. More of cakey cookie than chewy as it is described in the headnote.
