Celery root, fennel, pear, and apple salad with Meyer lemon vinaigrette from Chasing Flavor: Techniques and Recipes to Cook Fearlessly (page 132) by Dan Kluger

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute lemon zest mixed with tangerine zest or mandarin orange zest for Meyer lemon zest, and a mixture of lemon juice and tangerine juice or mandarin orange juice for Meyer lemon juice.

Pear here refers to an Asian pear. You would be correct that there is nothing surprising about this recipes - all the ingredients are naturals to work with each other. But this creates a salad that is safe for guests whose tastes and allergies you don't know. And a salad that is stable enough for small households to allow for leftovers - it stays crisp for a day or two.
