Can substitute rice vermicelli noodles or fresh noodles for dried egg noodles; the book's "Marinated eggs, three ways: marbled tea eggs", "Marinated eggs, three ways: soy eggs", or "Marinated eggs, three ways: beetroot-pickled eggs" for eggs; and tamari for light soy sauce.
