Sweet and sour braised pork with tamarind from The Guardian Feast supplement, October 31, 2020 (page 9) by Nik Sharma

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

My grocery delivery subbed pork leg for pork shoulder - it needed a bit more cooking to be tender and didn't have the flavour of shoulder but it was still good. I think it's a good one for people with allergies to alliums, because other than the garnish of spring onions it has no onion or garlic but still has a lovely flavour. I served it with shredded cabbage stirfried with curry leaves, mustard seeds, ginger and garlic.
