Can substitute ramen noodles, udon noodles, or egg noodles for thick rice noodles; chilli oil, chilli flakes or the book's "Rayu" for the book's "Everything oil"; kale, cauliflower, or Brussels sprouts for broccoli; peanut butter for tahini; and neutral oil of your choice for vegetable oil.
