Can substitute long red chillies for bird's eye chillies; fermented bean curd, salted black beans, black bean sauce, or spicy bean paste for white miso; and cauliflower, eggplants, English spinach, amaranth leaves, snow pea shoots, or choy sum for ong choy.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I added 2 sliced 1-clove garlic in place of the normal garlic cloves, delicious.
