Can substitute ras-el-hanout for harissa; vegetable stock or water for chicken stock; peas, broccoli, or asparagus for broad beans; and pistachios, hazelnuts, or almonds for pine nuts. See recipe for variations.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This was delicious. I purchased a big bag of barley couscous and was looking for recipes to use it. The ingredient listing wasn’t that precise but that did not present any real problems. Drizzled with some yogurt lemon sauce but otherwise prepared as written. Would definitely make again.
