    Can substitute any dark leafy greens for mustard greens, and Parmesan cheese for pecorino Romano cheese.

    This was a good bean soup recipe. I took some shortcuts to speed up the process. I used the pressure cooker to cook the beans and ham hock (40 minutes at high pressure, but should have done less time since the beans were partially blown apart). It does require a lot of salt at the end of cooking as the instructions mentioned. I would make this again.
