This recipe appears in the book as a variation of "Arancini with spiced meat filling." Can substitute carnaroli, Vialone Nano, baldo, or medium-grain rice for Arborio rice; mozzarella, Italian Fontina, or Gorgonzola cheese for provolone cheese; and pecorino Romano cheese for Parmigiano Reggiano cheese.
