    This is a lovely change of pace when zucchini season hits it peak and you can't bear your same old zucchini recipes one more night. It came together very quickly and the flavors were lovely. The finished dish looked just like the photo in the cookbook and we really enjoyed it. I couldn't find ricotta salata so I used regular ricotta instead but it worked just fine.
