    I used this syrup for drinks, rather than over ice cream, and it is delicious and wonderfully refreshing in a glass of sparkling water, with or without gin. In future, I would allow the lime zest to steep in the syrup as it cools, then strain it out because the finely grated zest just fell to the bottom of the bottle/glass.
