    Was looking for a way to use up some Tapatío traditional carne asada marinade. So I ignored the recipe for the marinade but followed the instructions for the rice mixture. It was very spicy the first night, but I suspect that my ready-made marinade was much spicier than the recipe here. My roommate was already complaining that it smelled too spicy before I even added any spice or marinade--while I was just cooking up the onion, garlic, and bell peppers! There's an error in the recipe with the garlic. Ingredients list mentions 2 tbsp in the marinade section and 1 tbsp in the rice-mixture section, but in the directions that is reversed. I think it also would have been fine to include the bean liquid, as suggested by some commenters; however, I followed the instructions as is. Also, if you garnish heavily with the cherry tomatoes and avocado, you can stretch this one out from 4 servings to 6. Had to use taco sauce instead of enchilada sauce because that was all that my supermarket had.
