Carrot snack cake with labneh frosting [Adeena Sussman] from Family Meal: Recipes from Our Community: A Charitable Cookbook to Support COVID-19 Restaurant Worker Relief by Various

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Made just the icing this time. I had a scant cup of labneh and it was plenty sweet with one cup of powdered sugar. Love this!

I made these as muffins to take to work, and they were a hit. I got 14 regular sized muffins from the batch, and baked them for 22 minutes. Using labneh in the frosting was genius - gave it a nice tang - and I will surely try this in other "cream cheese" frostings. I made a half batch of the frosting but only used about half a cup of sugar and it was still plenty sweet. The cake is not too sweet so the balance was good. Next time I might experiment with upping the tahini to have more of a pronounced taste, or maybe use some in the icing.
