    I used thighs instead of breasts which resulted in a slightly oilier chicken after using the herb butter. But I really liked the cranberry sauce here. The recipe calls for sautéed onion with sage and thyme which is then simmered in chicken stock. The stock is strained and then used to cook the cranberries (with a small amount of sugar). The final result is a sauce that’s more liquid than cranberry but with a definite savory note. I’ll make this again.

    This was easy and turned out great! I made it with the mashed beans and also threw some brussels sprouts on the same tray as the chicken and it was a great meal. The chicken took longer than the recipe said, but they were probably bigger breasts than it called for.
