    I roasted 3 smaller, skin-on mahi mahi fillets and prepared the full amount of vegetables to serve 2 for dinner. As written, the amount of vegetables would be rather skimpy. Both the fish and the asparagus took a few extra minutes to cook. Next time I might roast the asparagus to save on clean-up. This was quick, easy, and delicious.
