    Whooo this compote packed a nice kick from the ginger! Fun, uncommon way to add acid to a cheeseboard. Or to just eat with a spoon straight from the jar in my case. The vinegar taste remained strong, so not sure if cooking for longer would help mellow or meld the flavors better
