Black walnut crème from Salt, Smoke, and Time: Homesteading and Heritage - Techniques for the Modern Kitchen (page 123) by Will Horowitz and Marisa Dobson

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

The is a sour cream that requires one first smoke the cream for 2 days, then add powdered black walnuts and a bit of cultured buttermilk, then wait for it to set to your desired consistency. This is fun to do once and makes a great ice cream but this is a project recipe not a prepare a quick dessert recipe.
