Quiche Caitlin with asparagus, feta, and dill from Maman: The Cookbook: All-Day Recipes to Warm Your Heart (page 80) by Elisa Marshall and Benjamin Sormonte and Lauren Salkeld

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute parsley for dill. You may use the Classic pastry dough recipe on p. 79.

    Unexpectedly spectacular

Very good. Interesting flavor with the dill. The feta melds nicely with the eggs. No need to pre bake the crust but does take longer to cook. Used a gluten free pre made crust and it worked! Used 4/5 of the recipe as it was a deeper crust than a half recipe but not deep enough for the full. Makes it easy not to have to precook the vegetables. Would redo.

This quiche is delicious. The combination of asparagus, feta and dill is outstanding. I had to cook it about 10 extra minutes, but that just might be my oven. Even my husband, who isn’t a huge quiche lover, really enjoyed this. A keeper.
