Can substitute dried red kidney beans for dried cranberry beans, ditalini pasta for mezzi rigatoni pasta, and canned San Marzano tomatoes for the book's "Fresh tomato sauce (Sugo di pomodoro fresco)" specified in this recipe. Dried cranberry beans must soak overnight.
