Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Struggled adjusting the recipe down to 2-4 servings and it ended up being more soupy than I wanted. Used a bit of cornstarch to reduce and it turned out pretty good. Just not as hearty as I was hoping for.

    We also liked this soup. Even though I often serve soups without all the fancy toppers/garnishes (ie our ultimate test for good soup is "good without all the extras" -- and yes, this one passed the test), the cheese, bacon & chives did make it more main course worthy which is what I wanted this time. I can also see reducing / skipping the sour cream & butter if I just wanted a lighter lunch time choice.

    Elevated potato soup! Delicious as written, but I have been able to halve sour cream and omit added butter with no regrets. On the other hand, using full amounts of butter and sour cream left me with no regrets as well.

    This is the most delicious and satisfying potato soup! My whole family loved this. As the other poster noted, there is nothing complicated about it but it's different than other potato soups I have made. This will certainly be added to our regular rotation.
