    Quick and tasty. I skipped the pickled onions and served the tacos with pickled jalapenos instead but would like to try the onions next time.

    Easy and delicious. Mahi mahi worked well. The fish needed a little more salt, but otherwise the spices were good (not really spicy, but flavorful). We added hot sauce to taste. The pickled onions marinated a few hours and softened quite a bit; there was enough liquid for a larger onion, if desired.
