Penne with vodka sauce from Once Upon a Chef: Weekend/Weeknight: 70 Quick-Fix Weeknight Dinners + 30 Luscious Weekend Recipes (page 93) by Jennifer Segal

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This is a family favorite. I like to go a smidge lighter with the vodka (1/4 cup instead of 1/3).

Quick, easy, and very good. I had to substitute crushed tomatoes for whole, which saved chopping, although I still pureed the sauce at the end. Served with roasted broccoli florets, which were good eaten together.

My daughter, age 20, has been trying to duplicate the creamy tomato sauce from our local red-checkered-tablecloth Italian American restaurant. This is the closest we’ve been able to get. :) We didn’t have any vodka around, so she had to pass on that, and she added a little bit of Parmesan for flavor, but otherwise just followed the recipe. It was delicious, and she’s made it three times this summer alone.

This is solid. Good but not spectacular.
