Turkey, spinach and cheese meatballs from Once Upon a Chef: Weekend/Weeknight: 70 Quick-Fix Weeknight Dinners + 30 Luscious Weekend Recipes (page 112) by Jennifer Segal

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

These are very good. Can add spices and herbs to add some more flavour. Also change cheeses .

My family likes this recipe. It’s a great way to sneak veggies for my kids. I can’t find turkey sausage in my area, so I sub for regular Italian sausage and serve with pasta. I usually add extra sauce.

We loved these meatballs, key is turkey sausage combined with ground turkey, and finely chop the spinach so it blends in. Delicious even with jarred marinara.

My kids loved these and both asked for seconds. I did take quite a bit of extra time to chop up the spinach really fine and I was rewarded by never being asked "what is that green stuff in the meatballs?" I liked them, but they didn't wow me. I used a #30 scoop and got 41 meatballs, so I put half in the freezer.
