    I thought this was simple and flavorful. I cut the sugar in the marinade in half because my partner doesn’t like Asian marinades that are too sticky and sweet. I also added a red bell pepper and shredded cabbage to the peanut slaw.

    Tons of flavor in both the chicken and the cucumber salad. I thought it was an overwhelming combo but the rest of the fam loved it. I used chicken breasts instead of thighs and still turned out plenty juicy. I left out the tablespoon of sugar in the marinade and the chicken was still nicely grilled.

    The chicken marinated 6 hours; some of the flavor got in the chicken, but it was definitely helpful to drizzle the reserved marinade on top. With the sugary marinade, I had to turn the grill down to medium to prevent burning. I soaked the red onion in ice water, then patted it dry, before adding it to the dressing, and it was not too sharp for me. Crunchy peanut butter worked in the dressing. My family really loved this, served over rice. The marinade and salad had a kick, but weren't too spicy for my son. We also had edamame and avocado on the side - the cucumber salad alone would not have been enough for us.

    This was a big hit with my family. The chicken is juicy and tasty but still feels healthy. The salad is really delicious and interesting. We at this with plain steamed rice and it was a wonderful, balanced and interesting meal.

    Excellent. The salad has a nice little heat. The chicken was yummy. Used boneless thighs and only cooked 4-5 min a side.
