    Didn't have a sheet pan that large, used 2 smaller pans. Had 8 thighs=4.5 lbs, so made 1.5x chicken coating & placed them on the 4 corners of each pan. Used Burlap & Barrel's Herbes de Provence (doesn't contain lavender like a lot of what's sold in the US) & the flavor was divine! Used canned artichokes instead of frozen, & when I make again will stick with canned (drained, not rinsed) as I believe the extra moisture & salt added to the flavor of the veggies. Used baby carrots & almost forgot to add peas at the end, but decided not to use them since we ate peas a couple days ago. Only had a couple potatoes, so also made white rice (rice cooker, 2 Japanese cups, added 1 tsp chicken bouillon). Next time might omit potatoes & just use carrots, artichokes & maybe peas because the veggies with pan drippings was so delicious served over rice! Also, checked at 30 minutes & some of the onions/carrots had started to blacken, stirred it up then, & didn't taste burnt, but be sure to stir halfway.

    The pan was pretty crowded (I used 340 g artichoke hearts but only 6 chicken thighs) and I wasn't sure everything would roast properly, but it did. It may have helped that my oven was running hot. Easy and delicious! The chicken skin got nice and crisp.

    Really tasty, family friendly meal, with a good ratio of vegetables to meat (ie lots of veg). I was pleasantly surprised by how delicious artichokes roasted from frozen are....I'll definitely cook them this way again.

    Rather than combine the vegetables with the lemon juice, I roasted the lemon halves with the chicken and vegetables and then squeezed the juice on everything at the end of roasting. It was a quick meal to put together with minimal clean up. Next time I would deglaze the sheet pan with white wine or chicken stock just to boost the flavor of the juices.
