    Made this alongside pasta aglio e olio for a family birthday. The colors and aromas of the purple onion and the red, orange, yellow and green peppers all cooking together in the skillet are just gorgeous! Also, this recipe works beautifully for our mix of vegetarians and meat eaters: the peppers and onions are completely plant-based and cooked separately from the sausage. The non-meat-eaters can spoon the vegetables over pasta. This recipe will definitely become part of the regular rotation, it was a hit with everyone. One minor note: this recipe doesn’t mention boiling the sausages before grilling them, but it’s an inviolable part of the ritual of cooking sausages in my husband’s Italian family!

    Very tasty version of this dish. The method to cook the sausages indoors worked perfectly. Served over parmesan grits.
