Old-fashioned individual meatloaves from Once Upon a Chef: Weekend/Weeknight: 70 Quick-Fix Weeknight Dinners + 30 Luscious Weekend Recipes (page 168) by Jennifer Segal

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Excellent! So flavorful. Freezes well too.

These are very good meatloaves! The only change I made was for the glaze...I used my favorite meatloaf glaze which is a mixture of ketchup, brown sugar, and apple cider vinegar (Cook's Country Glazed Meatloaf). I served these with Rustic Parmesan Mashed Potatoes and Roasted Carrots from the same book. It was a truly delightful dinner that I will definitely repeat!

My family loved these even though I overcooked them. My oven was occupied, so I used the air fryer (still at 350). Initially checked after 25 min (using a thermometer), then at 30 min, but they still weren't quite done. So I tried 5 more minutes, but that was way too long - the ketchup burnt and the meat was overcooked (although not completed dried out, thank goodness); maybe 2 min would have sufficed? Will try again, maybe with a mixture of ketchup and mustard on top.
