    Subbed vegan chorizo and bacon for pork products. Used shallots and chipotle chile flakes. Didn’t bake eggs in sauce — instead topped sauce with fried eggs and served with buttered toast. Very satisfying! Will use leftovers (minus peas) in a variety of ways… pasta sauce, sandwich spread, chip dip, etc.
