Can substitute broccoli florets for cauliflower florets, clarified butter or rapeseed oil for ghee, yoghurt for double cream, and creamed coconut for coconut milk. You may use the garlic and ginger paste recipe on p. 172, and the garam masala recipe on p. 167.
