    Delicious, hearty chili, despite the lack of any meat. I couldn’t find all of the types of chili powder called for, so I used the two I had (regular chili powder and chipotle), and scaled them back to three teaspoons total - which turned out to be plenty spicy for us. I also didn’t make the avocado-shishito relish, as I already had a nice avocado-tomatillo salsa I made a few days ago for another recipe. It was a very nice acidic accompaniment. The chili was delicious, and not at all difficult to make.
