    I wanted to make a note for myself that I cooked this again in January 2026, having most recently cooked it on October 2025 but the new date came on to the old note. Anyway, it was much better with Stilton than St Agur.

    I usually make this soup from memory, but it was nice to follow the recipe - that's I added a chopped chilli at the start. I substituted St Agur cheese because Stilton was overpriced in the shop today & St Agur was discounted. I often buy & freeze reduced-to-clear Stilton in early January, which I use to make this soup, straight from frozen, along with the frozen broccoli.
