  • Chocolate Guinness cake

      Third time making this and it turned out well. Springform pan made a nice, tall cake, with only the slightest sink in the middle. Baked an hour but that was probably too long. Frosting was perfect consistency. Only had about 6 or 7 oz. of cream cheese (bar, not tub), used 1 cup powdered sugar, and added 1/2 cup of heavy whipping cream that I had whipped to soft peaks. Nigella site’s recipe calls for 18 tablespoons of butter, but other recipes or adaptations online use 10 or 12. I used 10 and it seemed fine. May try more next time but 17 seems like a lot!

  • Chocolate banana muffins

      I made a half recipe to try them out. After reading the online comments, I added 1/3 cup semi sweet mini chocolate chips to my half batch. They turned out well, something between a muffin and a cupcake. I ditched the papers and just used Pam spray and they released fine. Very good muffins, definitely a dessert with the chocolate chip addition. They might be good with raspberry icing. The next day, these tasted even better; I will definitely make them again soon.

      Halved the recipe which gave 6 muffins. Used Dove's Farm gluten free flour and flax egg, both of which gave excellent results. Choc chips would be a good addition . Nice banana flavour along with the cocoa powder. These will be one of my quick and easy bakes.

      I used regular (European-style) yogurt instead of Greek because that's what I had on hand and it seemed to work just fine. I also used brown raisins, which were fine but did not look as pretty, but this isn't the most attractive dish. Made it one day ahead and reheated. My family liked it a lot. My husband wanted more spice, which I wouldn't have minded as well, but our heat-averse son thought it was excellent as is. A spritz of lemon or lime at the end wouldn't be unwelcome. For simplicity, I might just cut the chicken into smaller pieces to begin with and possibly skip the browning step, as I'm not sure it added much. This looks like a long, complicated recipe, but it really isn't. I'd definitely make this again.

      My go-to banana bread recipe. Very easy, no need to dirty the mixer as it uses melted butter, and works every time. I use half wholemeal flour, and sometimes add mixed seeds as well.

      Fabulous cake - I thought about not adding all the syrup but I'm glad I did, wonderfully moist. Definitely more of a dessert cake to be eaten with a fork though. Delicious with raspberries. Thinking about experimenting by adding rosemary like the Italian ones.

      I made this (with the syrup) to serve with slices of fresh peach- fabulous and so easy. The regular polenta was a bit gritty(rustic)- I might try instant polenta the next time- and there will be a next time.

      A delicious cake that turned out perfectly. I used all the syrup which I was unsure about as I had a lot of syrup but it was fine and resulted in a very moist, very lemony cake. Will make again.

      Lovely cake that is naturally gluten-free and can be dairy free too if you follow Nigella's instructions on replacing butter with oil. Nigella's cake recipes always work and this was no exception. Made 2 days in advance and served with strawberries and clotted cream. Delicious!

      OMG. I made this last night. It is so good and so easy. It’s like a lovely creamy gelato. I didn’t have espresso or coffee liquor so I used vodka. At first the vodka taste seemed a little too evident but after freezing, the vodka taste dissipated and deep dark espresso shone through.

      I've made this twice in the last week as it's so easy and makes lovely ice cream (also I needed to use up the tin of condensed milk!). I like the fact that you don't need to take the ice cream out of the freezer after a few hours and stir it, as you do with most other no churn recipes. The first time round I made a coffee version; I don't have coffee liqueur so I made it with freshly ground coffee powder and some freshly brewed espresso. What a great taste! The second time I just used cocoa powder to flavour the ice cream. I probably ended up using 4-5 tablespoons of cocoa (I didn't measure, just tipped) and the ice cream was wonderful... next time I would add more cocoa powder or even melt some chocolate to make it even more chocolatey. Very happy with both versions.

      There isn't a lot of pumpkin in this, so the pumpkin flavor isn't that prominent. With the nutmeg and brandy, the ice cream tasted like a cross between pumpkin and eggnog ice creams - not a bad thing, in my view. This was very easy to make and I'd definitely make it again.

      Having read the comments on nigella.com I cut back on the eggs and sugar (I used 6 eggs, 200g of sugar and a 9" tin rather than 10"). In addition I didn't add sugar to the apples and I separated the eggs and whipped the whites. The recipe comes together very easily if you have the stewed apples made in advance. My cake took 60 mins at 160 fan - I'd probably up the temp to 170 fan next time. Very nice, light cake.

      I had to make some modifications, which may have affected the final texture. I had no red lentils and used chopped portobello caps instead of dried porcini. In spite of decreasing the liquid, and simmering for almost 3 hours, my sauce is fairly watery. I plan to freeze most of it, so maybe I can add the red lentils into each portion as I use it. Mine does not look tomatoey like the photo- will try to modify.

      Yum! This was easy and delicious. I've had this recipe bookmarked for quite a while, but needed to source some gluten free black pudding before I could make it. Really glad I found some. The meatballs are so light with just a little hint of chilli to lift the flavour. Makes loads, so I have a couple of portions stashed in the freezer. Hubby is very happy!

      Delicious! I had to grind the cardamom and it seemed very cardamom-forward to start with and I was worried it overpowered the cake. By day 2 it had mellowed and I needn't have worried. This makes a very small cake (1lb loaf tin).

      This was really tasty. Lots of flavour - but then there should be! I used port instead of red wine and used small chantennay carrots and shallots. It did dry out, so I added more water before adding some dumplings. This unfortunately then dried out the gravy a bit too much. Next time, I'll add double the stock at the beginning. Much tastier than my made up stews!

      This was my first try at using my new bundt tin and as you can see I didn't quite manage to turn the cake out perfectly but thanks to the robust texture of the cooked cake it wasn't difficult to put it back together. The cake itself tasted delicious and smelt wonderful while it was in the oven, I'll definitely be making this recipe again.

      I am saving this recipe to my shelf because it is so delicious. I made it a while back and since I do not have a bundt tin or square tin, I just used a circular tin, and it came out fine. Even my Dad, who puts on a show that he does not like desserts, asked for a second slice!

      Really, really good, not to mention, super easy. However, the cooking time is too long for the duck. Start checking the duck temp after about 30 min. Take the duck out and keep roasting the potatoes until done. Kale, blanched until tender, tossed in the drippings after the potatoes are removed make an excellent side dish.

      Not bad but I didn't love it enough to make again. Though my execution could have been better. I fail to see how pulsing cauliflower in a processor would result in 1/2 inch pieces. You end up with large untouched pieces and a lot of rubble. It really needs to be cut by hand. Maybe because of this my sauce didn't really brown so no caramelized flavor.

      My butcher boned a 5kg Turkey and I then used this recipe. Easy to carve and very tasty. I stuffed the bird on Christmas eve so less work next day. Definitely worthy of a repeat next Christmas. Good recipe, worked as written.

      I’ve made the pastry for these many times, and it works great. I love the hint of orange in it; I have filled with different mincemeats (David Lebovitz, Pam Corbin etc), but I always use this pastry recipe. Freezes and reheats perfectly, even in the microwave.

      I don't own Feast, but I made this from Nigella's website using the US measurements. I did have black treacle so used that instead of molasses, but used light corn syrup instead of Lyle's golden syrup. I used dark chocolate chips, black cocoa powder from King Arthur, and I didn't make the icing because I didn't have ginger ale. I loved this recipe. It's dark dark dark, and tastes like spiced dark chocolate. Love the density of the chocolate chips. Curious to try with the icing. At first I thought frosting would be overkill, but the cake itself is not overly sweet.

      Absolutely fabulous ice cream! Used Cacacha instead of tequila and added zest of 2 limes. Used Coconut Collab dairy free cream due to Intolerance. By heating my limes in the microwave for 40 seconds I only used 2 and a half limes for 125mls juice. Definitely going to repeat with different flavours.

      Fast and easy way to use up extra olives and peppers. Very tasty pan juices. Low effort recipe and a good summer variation for Sunday roast. I used only Romano red peppers (2 and half) and mixed pitted Nocellera and Kalamata olives, and added an onion to the pan veg. The leftover chicken went into Nigella's Vietnamese chicken salad the next day.

      Easy, low effort, with good results. A fresh dish that's great when I don't want to heat up the house in the summer. It's also easy to scale up as I've had a friend cook this for 8-10 of us at a dinner gathering. I've only ever made this with chestnut mushrooms as I prefer their flavour and wasn't sure about eating raw mushrooms.

      This has been cooked so many times. Ideal gluten free cake. Can be difficult the first time to know that it's cooked, but done once, you'll soon know. Lovely. I don't put the cream on the top - just serve with it, so I don't have to keep the cake in the fridge. Not a cake texture, so don't expect it to be.

      Made after reading Beth 891’s note and knowing I still have lots of golden and Fuji apples from last fall’s harvest in the refrigerator I like to use up before this year’s harvest. I did add pecans, vanilla and reduced the brown sugar to 100g which was a perfect sweetness for us. Perfect snacking muffins for breakfast or late afternoon. It is a little crumbly from apple pieces and next time, I would add extra 3-5 min baking time. Photo added.

      Half quantity with plain flour, vanilla yogurt and flax egg yielded 6 muffins. Didn't make the crumble topping and wouldn't in future. Kept well for a couple of days, still light and moist. Nice and easy recipe, Pear and ginger would be another good combination.

The only thing I will change is make it in a smaller dish so the cream layer is thicker. I made gluten-free sponge fingers from Katrina Cermelj's Baked to Perfection and they turned out really well.

      I used a pack of frozen oven fries instead of cutting my own chips. Very tasty combination! I was expecting a little more flavour from the pul biber though - if I make it again I might add some cumin and allspice to the mince, and possibly top it with some pickled chillies.

      I've made custard creams before and felt that the plain custard powder didn't offer very much in the way of flavour, so I added a bit of vanilla bean paste to both the biscuits and the buttercream. I also made the biscuits with brown butter, which was a big improvement on the ones I had made before but meant the biscuits didn't have the uniform gold colour. If I make them again I will pipe the filling. Smearing on with a palette knife gave too uneven a finish.

      Really good cake! I used SR flour with a little extra baking soda because I was out of plain flour, and olive oil in the glaze because I love the flavour of olive oil with chocolate. Took about 50 minutes to bake. Really tender crumb.

      Delicious! Interesting vegan potato salad with lots of herbs, capers, and cornichons. Visually appealing too. Next time I might lightly chop the capers since they tended to hang out on the bottom of the bowl more than cling to the potatoes. I used about 40% more chives and dill than the recipe calls for. Used grape seed oil instead of rapeseed.

  • Happiness soup

      Big disappointment! Yes, it was a lovely yellow colour, however, it tasted overwhelmingly of lemon and turmeric and I'm not over fond of turmeric. Reviews on Nigella.com raved about it, some had added onions/garlic/ginger, all of which I feel would greatly improve the recipe. I shall doctor the leftovers and hope for something better tomorrow.

      This was surprisingly quite good! Made it in a desperate attempt to use up grapefruit juice. Enough tequila to make it boozy, but nicely balanced by the juice mixer. A refreshing alternative to regular margaritas that has joined our summer drinks rotation.

      Used a mix of cheddar and Red Leicester. Had such hopes for this one as it looked like a quick and easy mac and cheese in the southern style (i.e. bound with egg). What I ended up with was a baked macaroni tortilla. It was tasty enough but not what I was aiming for! Will probably remake at some point when I'm desperate for mac and cheese, and will keep a close eye on the oven.

      Mine turned out quite dry and dense, but the butterscotch sauce saved it. It's a huge cake, if I make it again I'll do a half sized one. I made it in a Bundt pan and baked until a tester came out mostly clean, about 45 minutes.

I substituted St Agur cheese because Stilton was overpriced in the shop today & St Agur was discounted. I often buy & freeze reduced-to-clear Stilton in early January, which I use to make this soup, straight from frozen, along with the frozen broccoli.

      This is a good, quick & easy recipe (particularly when you found the specified cut & packaged vegetables reduced to clear at Waitrose) which does not even require chopping an onion. Next time, however, I would use half the volume of stock since we prefer a mixh thicker soup. I'd also add some red lentils to increase the protein content. I substituted nutmeg for mace & Greek yogurt for buttermilk.

We popped into the shop for milk but left with a haul of reduced-to-clear items which we rescued from food waste, including 1 kg of portobello mushrooms & 3 margherita pizzas, & cherry tomatoes & rocket for a salad - which made for a nice, express & very cheap lunch on a cold day.

      What other recipe could it be, when I walked into Aldi to find both Jersey Royal baby potatoes & green beans on special offer at 89 p? Unfortunately, Aldi had neither vegetarian pesto nor fresh basil, nor did Co-op, nor M&S, which are all nextdoor to one another. Never mind, because M&S spaghetti was on offer at 75 p, & in the back of my freezer was some Waitrose pasta sauce which I had bought reduced to clear in March. So it was a cheap & easy dinner on this Tuesday evening.

      The combination of browned butter, Aleppo pepper, garlic, egg yolk & tangy yogurt, also with its creamy texture, is gorgeous. On the other hand, using 3 different pans, 1st thing in the morning, for just 1 portion, is not proportionate to the reward. It could be a good dish for a casual light supper or lunch party, with really good bread, provided you could get all the eggs poached at the same time, however, it is hard to make it look pretty. The Aleppo pepper burns fast! I made it perfectly, then it cooled & resolidified, & burnt when I remelted it, so I had to make it again. Another time, I'd make the butter & pepper as a separate step, immediately before serving, & remove the pan from the stove the moment it is done.
