    I made this for our Christmas dessert and it was perfect. Made the day before, keeps well for several days, light and delicious. Definitely will be a repeat. The only thing I will change is make it in a smaller dish so the cream layer is thicker. I made gluten-free sponge fingers from Katrina Cermelj's Baked to Perfection and they turned out really well.
