    Made this with Sara Lee poundcake as suggested but feel that a bakery or homemade poundcake would be better.

    Blackberry icebox cake is easy to make and easy to assemble. The lemon zest and juice added to the blackberries adds a nice contrast to the sweetness of the rest of the cake. This cake is delicious and a nice summer dessert.
