    I enjoyed this, David, however, did not. He thought it was a little dry. Next time, I may add some cherry tomatoes.

    Used Tri-colored quinoa from Aldi, and kale from my Tumbling Shoals Farm Share. The eggs have a little coconut water in them which made them creamy. This was really good.
