    With a boneless 3lb roast, took about 4hrs in the oven. I skipped the overnight step and it turned out fine with a nice crust. Meat was very tender and well seasoned. I liked that the peach sauce was on the side rather than basted since fruit-savory combos aren't always a favorite with my husband, but this time he liked it better than I did (it's heavy on the wine rather than sweet). Fun to try, but maybe better in winter with the long cook time. I slightly mashed the fresh peaches after cooking since they were still in chunks....I think this is the sauce consistency the recipe authors were going for but wasn't sure since no photo of sauce.
