    I opted to do a quick hour soak and then 58 minutes in the pressure cooker for the black beans. Out of green bell peppers so used orange ones. The rice needed an extra 10 min in oven and a touch more water to become tender. Overall, this was a pretty good dish but very light. I tried to serve it as an entree since we're used to that with other bean dishes, but it's more of a side item. Not spicy at all, but it's easy to add hot sauce at the table. My 8 month old ate this enthusiastically, too (mashed slightly with extra liquid).
