Apple upside-down cake from The New Family Cookbook: All-New Edition of the Best-Selling Classic with 1,000 New Recipes (page 657) by America's Test Kitchen Editors

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Pleasant and moist though fiddly to make. Not sure it's as good as Annette Yates's West Country Apple Cake, but reasonable. The apples are very sour. Cake is quite buttery and sweet. It feels a little like they are contrasting, probably will improve on next day. Update: still pretty much the same next day. The cake part doesn't really absorb any apple flavor. Nice with coffee, though.
