Spicy maple grilled chicken sandwich with smoky bacon corn from Half Baked Harvest by Tieghan Gerard

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Halved the recipe for two people. Used one chicken breast, pounded to an even thickness, in place of the tenders. The chicken could easily be marinated longer than 10 minutes for more flavor. I only used one ear of corn, which was more than a cup and seemed like plenty for two sandwiches. The dish had excellent flavor. Next time I would double the sambal oelek as the chicken did not have even a hint of spice, and would use organic blueberries in the hopes they would be more flavorful once warmed with the corn mixture. This would be good served without a bun, piling the chicken with the corn mixture and a dollop of the yogurt and pesto on top. We really liked this recipe, and once everything was chopped, it came together quickly. Definitely worth making.
