    Can substitute butter or canola oil for coconut oil, cream cheese for mascarpone cheese, and blackberry jam for a portion of blueberry jam.

    This was excellent. I used 2 9” pans instead of 3 8” and it worked fine. (I didn’t quite use all the batter.) I used cream cheese and half butter/half canola oil in the cake batter, and I added 1/2 tsp coriander to complement the blueberries.
