    Can substitute provolone cheese for Fontina cheese. Omit prosciutto for a vegetarian variation.

    I omitted the prosciutto for a vegetarian meal. Mashing the roasted butternut squash before combining it with the ricotta cheese made filling the shells using a pastry bag very easy. I substituted an Italian blend of shredded cheese in place of the fontina or provolone and topped the dish with parsley instead of fresh basil. The dish was well liked by the family.
